Two Story Chimney Ciderworks in Gaithersburg to Hold Its Grand Opening This Month

Two Story Chimney Ciderworks at 7115 Damascus Rd in Gaithersburg will host the grand opening of its tasting room on Friday, November 19 from 3:00p.m.-9:00p.m. Two Stories has been producing and selling their ciders at local farmers markets since 2019.

According to the cidery, “the grand opening event will showcase the tasting room for family, friends, neighbors, and the local community to enjoy the several varieties of hard cider produced right on the farm. The cidery has also partnered with a local food truck, Bun’d Up, an exploration of Korean, American, and original Taiwanese bao buns.

Standing tall on the farm sits a historic two story hearth, which offered its new owner, Tommy Evans II, a vision of an expansive orchard and authentic hard cider for local Maryland and beyond. In 2019 the cidery was given licenses from the United States and the state of Maryland to produce hard cider. Since then, Evans has expanded to neighboring properties increasing the size of the orchard and adding a building—now the site of its brick and mortar location and tasting room—on the very farm where it all started.

The farm provides several varieties of apples that are all used to make each and every cider. Dispersed in the orchard are nitrogen fixing trees that add nutrients to the soil and are one of the innovative practices used to create a sustainable orchard. The tasting room offers a family-friendly, modern and rustic atmosphere, featuring several of its most popular hard ciders including:

  • Farmed and Foraged Series (Fruited Cider): Limited and seasonal varieties called Farmed and Foraged include strawberry, blueberry, cherry, wild blackberry, mulberry, and paw paw. All fruits are either foraged from the wild or we source the fruit from surrounding farms throughout Maryland.
  • Mon Amor (French-Style Hard Cider): This mildly sweet cider has a refreshing apple taste. Fermentation is halted early leaving this cider at 5.5% abv.
  • Over the Falls (Barrel Aged Cider): Aged in red wine barrels, this dry hard cider has a complex flavor with hints of oak and red wine from the aging process. This cider is fermented to 6.9% abv.
  • Proper Dry (English-Style Hard Cider): A dry cider where the sugars are completely fermented out, leaving it crisp and clean. This cider is fermented to 6.7% abv.
  • Ruby Red (Hopped Cider): A hopped dry cider with the wonderful aromas of grapefruit-scented hops without any of the bitterness. This cider is fermented to 6.7% abv.
  • Sweet Tart (Tart Cider): A little bit sweet and a little bit tart, this cider has a crisp and light apple flavor. We use apples that are picked early for thinning the trees and crab apples, as well as our normal apples. This cider is fermented to 5.5% abv.

The history of the farm dates back all the way to 1874, but flash forward more than 100 years later and Evans purchased and moved into the old farmhouse with his son, Tommy Evans III in 2016. They converted the overgrown farm and horse paddocks into an apple orchard where they planted the first modern apple trees. Since then, they have grafted cuttings from the heritage apple trees planted over one hundred years ago onto new rootstock to preserve the cultivar and use the fruit they produce.
