Fish Taco, a local, family-owned restaurant known for its Baja-inspired cuisine, is coming to The Shops of Potomac Valley shopping center (12121 Darnestown Rd) in Gaithersburg. The space was most recently planned for a Wayback Burger that never materialized and was previously home to an AT&T store.
Fish Taco focuses on using seasonal, sustainable, and locally sourced ingredients to create high-quality, hand-crafted meals. According to the restaurant, its mission is to provide a welcoming space where guests can enjoy flavorful food, foster real connections, and value quality time.
The menu includes a wide variety of Mexican-style favorites such as chips and dips, elote, ceviche, and tortilla soup. Guests can also choose from an extensive lineup of tacos, rice bowls, burritos, and quesadillas with proteins like chicken, steak, shrimp, fish, and vegetarian options. Salads and small plate versions of popular items are also available for lighter meals.
Fish Taco already operates three other Montgomery County locations in North Bethesda (10305 Old Georgetown Road), Downtown Bethesda (7251 Woodmont Avenue), and Cabin John (7945 Macarthur Blvd). According to Fish Taco, the new Gaithersburg location is expected to open at the end of the year or in early 2026.
