Popular Gaithersburg Taqueria Featured on TV Series “Signature Dish”

Ixtapalapa Taqueria was recently featured on the WETA PBS television program “Signature Dish,” which highlights standout menu items and the stories behind restaurants across the DMV region.

Hosted by Seth Tillman, the show explores local culinary destinations while showcasing signature dishes, neighborhood history, and the people behind the restaurants.

Ixtapalapa Taqueria offers a menu centered around traditional Mexican street food, including tacos, burritos, quesadillas, enchiladas, tostadas, chilaquiles, and pozole. Taco options include carne asada, al pastor, chorizo, lengua, tripa, pollo, cochinita, and pescado, served on corn tortillas with a variety of traditional toppings and sauces. The restaurant also features burrito bowls, Mexican soups, sides such as esquites and nopales, and desserts including tres leches cake. The drink menu includes aguas frescas, horchata, Mexican sodas, margaritas, palomas, micheladas, Mexican beers, and tequila-based cocktails. Kids menu items and vegetarian options are also available.

“Co-owner of Ixtapalapa Teresa walks Seth through the process of preparing the soup from the ground up, beginning with carefully cleaning and preparing the pancita, or beef stomach, along with cow’s feet. She demonstrates how these components simmer together to create a deeply flavorful, rich broth, highlighting a nose‑to‑tail approach where nothing goes to waste.”

Ixtapalapa Taqueria is owned by the team behind several other local concepts, including Taco Bar El Guero, Mayan Monkey Brewery, and La Gula Mexicana.
