Fish Taco is moving closer to opening its new Gaithersburg location as construction continues at The Shops of Potomac Valley at 12121 Darnestown Road.
The restaurant is scheduled to appear before the Montgomery County Alcohol Beverage Services for its liquor license hearing on Thursday, April 9.
Work on the space has been ongoing for several months. The front wall of the building has been pushed closer to the street, expanding the footprint and increasing visibility from Darnestown Road. Signage for the restaurant was installed last year at the shopping center. The space was originally planned for a Wayback Burger that never opened and was most recently occupied by an AT&T store.
Once completed, the new restaurant will become the fourth Montgomery County location for Fish Taco, joining existing restaurants in North Bethesda, Downtown Bethesda and Cabin John. Fish Taco is known for its Baja-inspired menu featuring tacos, burritos, quesadillas and bowls with proteins such as fish, shrimp, chicken and steak, along with vegetarian options. The menu also includes smaller plates such as chips and dips, elote, ceviche and tortilla soup.
The restaurant emphasizes fresh, seasonal and sustainable ingredients while creating a relaxed, community-focused space for guests to gather and enjoy casual meals.
