1-2-3 Vienna Sausages by Lois Spencer – Kensington
If you’re like me, it’s been a while since you’ve had a Vienna sausage (if ever). The best way to describe them is that they taste like soft, mushy hotdogs. The recipe consists of one can of sausages, currant jelly, and mustard. If you don’t have currant flavored jelly, grape jelly is a suitable substitute. It calls for using a double boiler, but you can just cook on low-medium heat to prevent the jelly from burning.
If Vienna sausages gross you out, you can make this recipe with real hot dogs, lil smokie sausages, or if you are feeling fancy, grab a bag of frozen meatballs and cook in the slow cooker.
Microwave Pineapple Upside Down Cake by Hazel Staley
This could be a fun recipe to bake with small children (with zero burn risk), or if you are like me, curious to see what happens when you microwave a cake.
Brown sugar, butter, pineapple and cherries
Pour batter on top, nine minutes in the microwave
Out of the microwave, time to flip
The cake was a little dry, but that was expected. The form held up well when I flipped it out of the pan (I’ve made traditional Pineapple Upside Down Cakes where I wasn’t as fortunate.)
For basically the same amount of work, you are better off buying a box of Duncan Hines and making one in the oven, but that just isn’t as much fun.
