Kajiken, a restaurant that offers “soupless ramen,” will be opening soon at The Shops at Congressional Village shopping center on Rockville Pike in Rockville.

The restaurant, which was founded in Japan in 2010, has put up signage in the window at the shopping center. Kajiken successfully expanded its presence globally, reaching 100 stores worldwide, in 2022. The inaugural United States location opened in nearby Baltimore in August of that year.

Kajiken offers mazesoba, or abura soba, which is a brothless ramen that allows you to choose your own flavor add-ons and sauce combinations. Customers can choose from classic ramen with a broth base, abura soba, and donburi, which is a small portion of meat of your choice served over a bowl of rice. You can go with traditional Japanese flavors or even carbonara for your ramen.

Per the restaurant’s website, “Kajiken is a renowned Japanese chain known for our exceptional abura soba. At Kajiken, we dedicate ourselves to perfecting the art of this distinctive ramen style, emphasizing our unwavering commitment to flavor and technique. With precise seasoning, meticulous cooking methods, and the finest ingredients, we create an unparalleled taste experience that defines our brand.”
