Pizza Rosa to Close

Pizza Rosa has announced it will permanently close on June 28. The pizza shop operates inside its sister business, Open Hand Pasta & Provisions, which opened in 2022 at 220 Girard St. Suite B in Gaithersburg. The Open Hand storefront will also be closing.

Open Hand is a Gaithersburg-based food business focused on handcrafted, small-batch items like pasta, cheese, sauces, and breads made with locally sourced, sustainable ingredients. While the physical location will shut down, the company will continue selling its frozen pizzas through Open Hand at local farmers markets.

According to Pizza Rosa, its pizza “has a thicker crust than what you might find in most pizza shops, but not as thick as a pan pie. We mix our dough by hand and use a slow fermentation at room temperature to make a light and airy crust. Of course, we only use the best ingredients available—spring water, artisan flours, organic San Marzanos, Mediterranean sea salt, and the mozzarella we make daily. Our not-so-secret ingredient is the nixtamal we make from local corn. We add a little nixtamal to the dough for flavor, nutrition, and to help it hold up better in a box. Please don’t ask silly questions like what style pizza this is (Neapolitan, Roman, Detroit, NY, NJ, Chicago, Sicilian, etc.). Imitation is best left to chains and hacks. This is pizza our style—you won’t find it anywhere else.”

“Well folks, after some incredible years serving our amazing community, we will be closing our pizza shop after service on June 28th. This wasn’t an easy decision, but it comes with deep gratitude for every single one of you who walked through our doors, shared a slice, and became a part of our extended food family. From birthday parties, to first dates to last bites – thank you for the memories! Come visit us before we close so we can say goodbye the way we know best – with great pizza and warm hearts. We will, however, continue to sell our frozen pizzas through our sister company, @open_hand_pasta, at farmer’s markets in the area.”
