Mayan Monkey, the new concept from the team behind local favorites Taco Bar El Güero, Ixtapalapa, and La Gula Mexicana, opened last year at 227 E. Diamond Avenue in Gaithersburg, located in the former longtime home of Growlers. Since its debut, it’s been quietly building a reputation as one of the area’s must-visit spots for creative Mexican cuisine (video below).
Our very own Mr. MoCo recently stopped by for lunch and ordered something familiar: steak tacos. He’s enjoyed them for years at Taco Bar and Ixtapalapa, but these were different… they were better. “I’ve had steak tacos at dozens of restaurants across Maryland and the DMV, and these have been my absolute favorite. I’ve never had steak tacos with such an amazing flavor.” When he asked what set them apart, the answer was simple but surprising… bone marrow.
“The bone marrow in our steak tacos is unique to Mayan Monkey,” the owners explained. “It adds flavor, shine, and richness to the marinated flank steak, which we grill, cut into chunks, and finish with peppers and onions so everything marries together.” The result is a taco that’s familiar yet elevated… a rich, savory bite that may just be the best steak taco we’ve ever had in not just Montgomery County, but the entire state of Maryland.
