Fish Taco Plans Spring 2026 Opening in Gaithersburg

Signage for Fish Taco, the popular local restaurant known for its Baja-inspired cuisine, went up earlier this year at The Shops of Potomac Valley in Gaithersburg (12121 Darnestown Rd). A representative for the family-owned business shared that interior construction is set to begin soon, with an anticipated opening sometime in spring 2026.

The space was originally planned for a Wayback Burger that never opened and was previously occupied by an AT&T store. Once complete, it will mark Fish Taco’s fourth Montgomery County location, joining existing spots in North Bethesda (10305 Old Georgetown Rd), Downtown Bethesda (7251 Woodmont Ave), and Cabin John (7945 MacArthur Blvd).

Fish Taco’s menu is rooted in fresh, seasonal, and sustainable ingredients, offering hand-crafted takes on Mexican-inspired favorites. Guests can expect a wide selection of tacos, burritos, quesadillas, and bowls with proteins like fish, shrimp, chicken, steak, and vegetarian options. The menu also includes smaller bites like chips and dips, elote, ceviche, and tortilla soup, plus salads and shareable plates for lighter meals.

According to the restaurant, Fish Taco’s mission is to create a relaxed, community-oriented space where guests can “enjoy flavorful food, foster real connections, and value quality time.”
