In August 2024, we reported that a sushi restaurant had signed on to open at Rio Lakefront, though details at the time were limited. We later learned the restaurant would be called Koi Sushi, and now, with construction moving forward, it appears the highly anticipated spot is tracking toward an early 2026 opening.
While the full menu has not yet been released, Koi Sushi recently launched an Instagram account, @koisushirio, offering a first look at what’s coming. Photos shared so far highlight a variety of artfully plated sushi dishes alongside colorful, craft-style cocktails, giving a glimpse into the upscale dining experience planned for the Rio location.
Koi Sushi is also planning to lean into nightlife. The restaurant will host “Club Rising Sun Koi,” described as EDM every Saturday night. The weekly event will run from 10 p.m. to 2 a.m. and feature a live DJ, drink specials, and free admission.
More details, including an official opening date and full menu, are expected to be announced as construction continues.
