A new Mexican street food truck, Hijos del Maíz, is opening today in Rockville at 12151 Rockville Pike, located at the Shell gas station across from Federal Plaza. The husband-and-wife-owned business will operate daily from 11 a.m. to 8 p.m.
The food truck specializes in Mexican street food made with fresh masa prepared in-house using heirloom corn sourced from different regions of Mexico. According to the owners, the corn is cooked through nixtamalization and ground in a stone mill, with no additives or preservatives, and used for menu items such as tacos, quesadillas, and tostadas.
