First Look: Shiki Fusion Debuts with Tuna Flights and More

Shiki Fusion is now open at Westfield Montgomery Mall in Bethesda, officially welcoming its first guests on Monday, April 20. We stopped by today for lunch to support the restaurant get an early look at the new Japanese and Thai fusion concept from the team behind Nan Xiang Soup Dumplings. Though the restaurant offers an extensive lineup of weekday lunch specials, we went all in on the main menu for a broader first impression. Thai dishes will have to wait for another visit.

We started with the Rock Shrimp ($15), a solid opener featuring crispy fried shrimp coated in a sweet citrus sauce, and the Crispy Spicy ($18), a more indulgent bite built on deep fried rice topped with spicy crunchy tuna, tobiko, scallion, eel sauce, and spicy mayo.

The Naruto Lollipop ($18) stood out as one of the more unique and lighter options. Wrapped in cucumber instead of rice, it packed in tuna, salmon, yellowtail, avocado, and tobiko for a clean, protein-heavy roll that didn’t feel overly heavy.

The highlight of the meal was the Tuna Flight ($43), which delivered something typically reserved for omakase experiences in a more approachable format. The plate included 2 pieces each of O-toro, Chu-toro, bluefin tuna, and spicy crunchy tuna, offering a range of textures and richness that made it easily the most memorable dish we tried.

As we’ve previously reported, Shiki Fusion blends Japanese precision with Thai flavors, offering everything from sushi and sashimi to curries, hibachi, and noodle dishes. The restaurant is located above Nan Xiang Soup Dumplings and across from the AMC theater, continuing the group’s expansion within the mall.
