The Tillery, located inside the Marriott Hotel at Metro Centre Owings Mills, has introduced the B.A.L.T.I.M.O.R.E. sandwich, created by Executive Chef Matthew Zafrir. The sandwich features bacon, avocado mousse, lime, tomato, mayo, onion, and a runny egg on brioche.
Diners can add Ikura (salmon roe) for an additional $15, offering a caviar-inspired upgrade. Chef Zafrir describes the dish as a tribute to Baltimore’s culinary identity, blending comfort with a luxury option to reflect the restaurant’s creative approach.
“This sandwich is more than a meal, it is a love letter to Baltimore,” said Zafrir.
“I wanted to create something approachable, playful, and rooted in pride for our city, while still offering guests the opportunity to elevate the experience with a luxury twist. It’s the perfect representation of our philosophy at The Tillery: technically sound food that remains unpretentious.”
