“Japanese Cava” Opens in Maryland

Shibuya Eatery, the popular Japanese concept from chef Darren Lee Norris, has moved into Montgomery County with a new Chevy Chase location. The restaurant, described as “Shibuya 2.0,” according to Axios, opened Tuesday at 4461 Willard Avenue.

Unlike its earlier fine-dining incarnation in Adams Morgan, which closed permanently in April 2024, the new Chevy Chase spot will take a fast-casual approach, offering scratch-made ramen, bento boxes, curry katsu, and other Japanese comfort foods at more affordable prices.

Norris, who first made his mark on the DC dining scene more than a decade ago with the acclaimed izakaya Kushi, said the move reflects changing customer demand and the realities of today’s restaurant industry. Rising costs for rent, labor, and ingredients, along with a growing appetite for quick but high-quality dining, led him to create a model that blends chef-driven cooking with counter service efficiency. “Think Cava, but Japanese,” he explained to Axios when describing the concept.

Menu prices will start around $19, with most items topping out near $23, making the eatery more accessible while still maintaining the brand’s commitment to quality and authenticity. The new restaurant will emphasize takeout and quick service, while still providing space for dine-in customers who want to enjoy a sit-down meal.
